SUNDAY DINNER #4

This recipe is rocks! I got this from a friend. It's healthy and easy and a winner with the kids....



SIMPLE SALMON with MANGO SALSA


2 large ripe mangoes, peeled and cubed
2 red bell peppers, cored, seeded and chopped
1/2 cup fresh cilantro, chopped
2 limes; one cut in half and the other cut in wedges
1/2 tsp ground cumin
coarse salt
freshly ground pepper
approx. 2 lbs salmon fillets
2 tsp olive oil

Combine mango, bell pepper, cilantro, juice of one lime and cumin in a bowl. Toss gently and season with salt and pepper.

Preheat broiler. Place salmon filet's skin side down on baking sheet lined with foil. Coat fish with olive oil and season with salt and pepper. Broil for 10-13 minutes, or until fish flakes easily.

Using a spatula, slide the salmon off the baking sheet. The skin should stick to the foil; discard. Spoon salsa over the salmon and serve with lime wedges.

Oh my, that sounds divine! Have you ever grilled a salmon soaked in buttermilk and topped with a nice array of spices on top of a cedar plank? Another slice of heaven as well.

LOL I kind of gave up for a bit... but I am back... I had to work some things out in my head and life for a bit. I am in a MUCH better place now and able to use my blog much more fun like! LOL I am slowly making the rounds to all my old... er past... blog buddies and saying hi! I have missed all my blogging friends! LOL Its great to see you and your brood doing so well! :)
