SUNDAY DINNER #5

God. A week has gone by with no posts. I thought I would have more time once the kids were in school.

Apparently not.

No worries! I have a yummy dish for you to try this week. It is my absolute favorite salad. Enjoy!


ASIAN SALAD WITH GRILLED CHICKEN
Dressing:
1 cup oil
1 cup brown sugar
1/2 cup wine vinegar
1 TBS soy sauce
salt
fresh cracked pepper
Blend.
Salad:
2 cups pecans, broken in to thirds
2 cans mandarin orange sections, drained
2 pkgs. Ramen noodles, uncooked & broken up
5 TBS unsalted butter
1 1/2 cups sugar snap peas
3 avocados, sliced
1 can water chestnuts, sliced
Spring mix lettuce
5 green onions, sliced
1 TBS sesame seeds
6 chicken breasts, brushed with olive oil, salt and cracked pepper to taste
  1. Grill chicken.
  2. While chicken is grilling, brown pecans and noodles in butter. Once browned, pour onto paper towel to cool. In large bowl, combine noodles and pecans with lettuce, onions, water chestnuts, sugar snap peas and oranges.
  3. Toss salad mixture in dressing. Slice chicken in to strips. Place avocado and chicken on salad. Sprinkle it all with sesame seeds.
  4. Impress your family and friends......

Looks pretty yummy! Maybe eating this will also help me feel like less of a lard ass as well.

OK Tallulah, you are seriously slacking! How can I get my Tallulah fix if you no longer post! Color me sad!
